Engine coolant change with replacement of timing belt?

A year ago I had a reputable mechanic (Not a Lexus mechanic) replace the timing belt and water pump for my 1997 ES 300 with 90,000 miles. Would he have replaced the engine coolant at the same time?

Need to change Engine coolant on Chevy Lumina?

My boyfriend’s Chevy Lumina’s antifreeze turned brown and has the consistancy of oil. He will get it looked at a mechanic ASAP but in the mean time is there any way to change it like you would Engine Oil? I don’t see a pan or way to bring out the old cruddy stuff.
